Sugar is my entire personality and I stopped pretending years ago that a salad at lunch balances it out. The confession is that I taste everything twice before it leaves the kitchen, and the second taste is not quality control by any definition. Pastry is precise work, grams and temperature and timing, which is funny given how little else in my life ever gets measured.

Mint tea is the reset between batches, three glasses a day minimum, poured from far too high because it simply looks better that way. Night markets are my one reliable social habit and my main source of ideas worth stealing. With nobody watching I eat the broken one standing over the tray at eleven at night, and there is not a single thing about that I would change.
