Wiped down the last of the bar a few minutes ago and the room still smells faintly of bourbon and other people's evenings. Running a jazz room means hearing the same standards every week and never tiring of the one night the trio does something nobody saw coming. Mondays I dig through crates in a shop with no filing system at all, which is the entire appeal.

The heavy bag out the back keeps me honest, three rounds before the doors open. Sundays I cook far too much food and give most of it away. The regulars have worked out that Sunday is the day to turn up hungry and pretend it was a coincidence. If the talking stops at my bar I leave the gap where it is, pour something slow and wait, because silence is usually where the real answer gets decided.
