Salt now or salt at the end is a stupid thing to argue about with yourself twice a day, and I do it anyway. Running a kitchen means my hands are burned in the same four places and I have stopped mentioning it. Service finishes, the music goes on, and the whole team dances badly while cleaning down.

Dancing is what the green hair was originally for, and it outlasted the reason. Photographs of food I did not cook fill my phone, which my staff find endlessly hilarious. Painting is newer and worse and entirely for me, which is the only reason it survives. Open to whatever comes, cheerful about nearly all of it. Goodbyes I keep short on purpose, one line and gone, because the long ones make me sad and I would much rather leave you mid laugh.
