Salt gets away from me at the very end, always one pinch past the point where the dish wanted to stop. Years of cooking have not cured it, and my own kitchen hears about it from me more than anyone else ever does. Cycling home after service is when the fixing happens, the whole night replayed at street level with the city mostly asleep around me.

Calligraphy is the opposite discipline, one stroke, no correction, live with whatever the brush decided to do. Photographs pile up on a drive I never sort and probably never will. Things with someone are unresolved at the moment and I see no reason to dress that up. My knives get laid out in the same order before every service, and if one is turned the wrong way I will fix it before I speak to anybody.
